Ingredients:

1 1/2 cups basmati rice
2 tbs vegetable, or coconut oil
1 large onion, thinly sliced
3 garlic cloves, minced
1-inch piece of ginger, grated
1 cup mixed vegetables – carrots, peas, green beans, and cauliflower
1 cup chickpeas – cooked or canned
1/2 cup of coconut milk or cashew cream
1/4 cup chopped tomatoes
2 1/2 to 3 cups of vegetable broth or water
1/4 cup chopped cilantro and mint leaves
1 tsp cumin seeds

Garam Masala Rice
Basmati Rice Pulao
1 cup basmati rice
2 tablespoons ghee or oil
1 big onion, sliced into half-moons
1-2 fresh green chili peppers, slit
1 teaspoon mustard seeds
2 bay leaves
1 piece cinnamon stick
3-4 whole cloves
3-4 whole cardamom pods
1 teaspoon turmeric powder
1 teaspoon coriander powder
1 teaspoon cumin powder
1 teaspoon garam masala powder
Salt to taste

Saffron soaked in 2 tablespoon warm water (.
Cook the Aromatics: Heat some oil in a large pot over medium heat. Add the cumin seeds, mustard seeds, bay leaves, cinnamon stick, cloves, and cardamom pods, and let them sizzle in the oil until fragrant.
Add the Onions: Add the onions to the already browning onions. Cook until they turn golden brown. Add the garlic and ginger and cook for another minute.

Add the mixed vegetables, chickpeas, ground turmeric, ground coriander, ground cumin, and garam masala. Cover and let cook for 5-7 minutes or until tender.
Add the wet ingredients: Add the chopped tomatoes, coconut milk, and vegetable broth. Mix well to combine. Bring to a boil.
Add Rice: Layer the soaked, drained rice over the vegetable mixture and using a spoon, gently spread—but do not mix. Top that off with drizzling the kesar water, if using.

Cook Biryani: Turn the heat to low; cover the pot with a tight-fitting lid and let it cook for 20-25 minutes until the rice is done properly and all the liquid has dried up completely.
Finish off and Serve Remove from heat and let sit for 10 minutes. Fluff up biryani with a fork and garnish with chopped cilantro and mint leaves and even cashews and raisins if desired. Serve hot with some Vegan Raita or with a side of salad. Individual layers of rice and vegetables cooked to flavors.
Resting Time: The resting helps all those mushy flavors to come together.
